Tomato Casserole

Marty loves to grow tomatoes. But, believe it or not, he's not a big tomato fan. He'll enjoy an occasional slice of tomato on his sandwich. That's it! So, I'm always searching for new ways to make tomatoes more interesting and appealing to him. I found this recipe that we really enjoyed recently and I think you will enjoy it, too.

Tomato Casserole

  • 3 tbs olive oil
  • 2 cups diced Italian bread (2" cubes)
  • 2 lbs of plum tomatoes, diced
  • 1 tbs garlic, finely chopped
  • 2 tbs sugar
  • salt & pepper to taste
  • 1/4 cup chopped fresh basil
  • 1 cup grated Parmesan cheese

Heat olive oil in a large skillet. Add bread cubes and saute until golden brown. Mix tomatoes, garlic, sugar, salt & pepper in a bowl. Pour tomato mixture into skillet with the lightly browned bread cubes and simmer for 5 minutes. Stir mixture occasionally. Take of the heat, add basil.
Pour into a casserole dish, top with grated cheese. Drizzle with additional 2 tbs of olive oil and bake in a 350 degree oven for 40 minutes until bubbly.
