Nicky's Shepard's Pie

My grandson Nicky wanted me to post his favorite dish. It's really not the traditional Shepard's Pie....just my version of a one-pan meat loaf dinner. God bless my grandchildren. It doesn't matter what I prepare, they'll try it. Even if it's just popcorn, it always tastes better at Grammy's house. (Drives my daughter crazy.)

Make your favorite meat loaf recipe using about 1 pound of chopped meat. Press the meat mixture into a 9" glass or aluminum pie pan bringing it up around the sides of the pan like you would a pie crust. It should be about an one and a half inches thick. Bake at 350 degrees for about 15 to 20 minutes. Remove from oven. Drain off the grease. Sprinkle with 8 oz of shredded Cheddar cheese. Top with mashed potatoes (about 4 cups). Brush potatoes with melted butter. Return to the oven until potatoes are golden brown. You can put it in the broiler for a minute or two if necessary. Slice into wedges and serve with brown gravy and your favorite veggie. I like to add a layer of caramelized onions. Try using mozzarella, pepper jack, provolone or Swiss cheese instead of Cheddar. Always try to make it your own. The pie will serve 4 to 6.
