Mini Stuffed Peppers

I found a really great recipe for stuffed peppers. You can buy the mini tri colored peppers in a 2lb package. (red, yellow and orange)

Mini Sausage Stuffed Peppers

  • 12-14 sweet mini-peppers, halved and seeded
  • 1 package (8 oz) cream cheese
  • 1/2 cup shredded cheddar
  • 1/2 cup shredded Monterey Jack
  • 4- 6 hot Italian sausage, browned and crumbled
  • 1/2 cup dry bread crumbs
  • 1/4 tsp garlic powder
  • salt & pepper

Mix together cheeses, sausage and seasonings. Spoon fill each pepper half. Dip filled section in bread crumbs. Place in a greased pan and bake at 350 degrees, uncovered, for 20-30 minutes.

On a recent trip the the warehouse club, I purchased Chicken Sausage with Asiago Cheese and Spinach. They are absolutely delicious and the best part ..........they are fully cooked so all you have to do is brown them. I used them in this recipe instead of pork sausage. Yummy.
