Confetti Pasta with Chicken

My Mom was pretty much a stay-at-home mom until we were in our teens. There would be soups, stews and sauces simmering on the stove top for hours. Today, most of us are working a 9 to 5 and are strapped for time. I like to find the easiest and quickest way to get dinner on the table. Marty loves pasta. The man could eat pasta every night. Confetti Pasta with Chicken is one of his favorites and mine too because I can prepare it in about 20 minutes.


Confetti Pasta with Chicken


  • 1 jar of Alfredo Sauce
  • 1/2 lb bow tie pasta
  • 1/2 cup frozen peas
  • 1/2 cup diced tomatoes, drained
  • 2 boneless chicken breasts, grilled and sliced
  • grated Parmesan cheese
  • salt & pepper

Grill chicken breast using your favorite seasoning while the pasta is boiling. Add frozen peas to the pasta water during the last 5 minutes of cooking time. Heat Alfredo sauce and diced tomatoes in a separate saucepan. Drain pasta with peas, add Alfredo sauce, top with sliced chicken. Sprinkle with grated cheese, salt and pepper to taste and....enjoy.

** Also great with cubed ham or sausage. Try broccoli instead of peas.
