Cathy's Fruit Salsa


Birthday celebrations are usually a monthly event at work. We all bring in goodies. The usual.....cake; cookies; fresh fruit; cheese and crackers. Today, my co-worker Cathy knocked our socks off when she brought in her Fruit Salsa with cinnamon pita chips. What a treat. Colorful, delicious and it's not a high calorie nightmare. Great way to get the kids to eat fruit, too. This is a must try. Hats off to Cathy!


Fruit Salsa
  • 3 Golden Delicious apples (peeled, cored and diced small)
  • 3 Kiwi fruit (peeled and diced small)
  • 16 oz. strawberries (diced small)
  • 1 bag (12 oz.) frozen raspberries
  • 3 Tbs. brown sugar
  • 3 Tbs. honey
  • Cinnamon Pita Chips (I use Stacy’s)
Combine all fruit in bowl with brown sugar and honey. Toss to coat.
Add frozen raspberries, toss to mix.
Refrigerate for 2 hours (or overnight) to allow raspberries to thaw.
Stir and serve with Cinnamon Pita Chips.
