Donna's Penne Vodka

Donna's Penne Vodka
Donna, one of my co-workers,  shared her recipe for Penne Vodka.  For those of us who work a 9 to 5, this recipe is a super time saver.

Add some crusty Italian bread, a tossed salad, a few lit candles and of course a glass of red wine ..........  "Voila!" a gourmet dinner in less that a half hour.

Donna admitted that the last time she made Penne Vodka, she doubled the recipe.  In error, she added two cups of heavy cream instead of one. The result... Doubly Delicious!!!  Her husband thought he died and went to heaven.  You can't go wrong with this one.  Give it a try.

Penne Vodka

  •       1 lb penne
  •       2 tbs olive oil
  •       4 cloves garlic
  •       ½ onion or scallions
  •       1 tbs basil
  •       3 oz. vodka
  •       1 jar Classico Marinara
  •       ½ cup heavy cream
  •       ½ stick butter
  •       Parmesan cheese
** Optional:   Add chicken, shrimp, peas or prosciutto.

 In large skillet, sauté garlic, onion, basil and if desired, chicken, shrimp, peas or prosciutto.  Add vodka, heavy cream and marinara.  Let simmer.

Cook pasta, when done put in bowl, add butter, vodka sauce and sprinkle with parmesan cheese.
