BAKED ASPARAGUS W/PARMESAN CHEESE

My mom made asparagus every Easter. She always said that asparagus was one of the signs of springtime. Mom would make asparagus patties. She would steam the asparagus and mix them into a batter of flour, egg and grated cheese and then, of course, deep fry the patties.

God bless my Mom and my Aunts. They fried everything. Great cooks......but they loved that black cast iron frying pan.

I found this recipe to be on the lighter side. It's a really nice side dish for that Easter Sunday roast.









BAKED ASPARAGUS W/PARMESAN CHEESE
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • 1-2 tablespoon Parmesan cheese, freshly grated
  • 1-2 tablespoons bread crumbs
  • A sprinkle of garlic powder

Preheat oven to 450° F.

In a medium baking dish, toss asparagus with the oil and arrange in an even layer.

Sprinkle with the Parmesan and bread crumbs.

Bake for about 15 minutes, or until asparagus is tender
