Spicy Sweet Potato Wedges

My niece, Anne Marie, who is also my Godchild, just recently became a Grandma for the first time. Where did the time go? It seems like yesterday that I was holding her like a little trophy. All of my nieces have families of their own now and are all great cooks. They have all encouraged me to keep blogging so I think it's time to include some of their recipes too. Anne Marie sent me this sweet potato recipe, Spicy Sweet Potato Wedges. (I just love sweet potatoes)

Spicy and sweet pretty much describes all four of my nieces (Anne Marie, Kathy, Joanne and Christine)....so this recipe is so appropriate.

Spicy Sweet Potato Wedges

  • 3 large sweet potatoes, cut into 1/2" wedges
  • 1 Tbs vegetable oil
  • 1 tsp sugar
  • 1 tsp chili powder
  • 3/4 tsp salt

Toss all ingredients with potatoes (you can adjust the chili powder according to taste). Spread out on a lightly greased baking sheet. Roast for 20-30 minutes in a 475 degree oven. (shake the pan once during the cooking process to prevent sticking) Remove from oven and drizzle with a mixture of 2 Tbs maple syrup and 1 tsp cider vinegar. Serve with sour cream for dipping.

**You can some hot sauce to make them extra spicy.
