Bacon Wrapped Chicken

You can serve "Bacon Wrapped Chicken" as an appetizer or as an entree. I like to serve it with potato salad and corn on the cob. Rice makes a great side dish as well. It's really simple and you can prepare it ahead of time. The kids loved it when they were little, but now, they're all into organic this and organic that. Don't misunderstand, they still love it......they just complain , while their eating it, about how unhealthy it is. I'm not saying that you should be eating bacon on a regular basis but once in while, it's not going to hurt you. I guess you can use turkey bacon if you want to keep it healthier.

Bacon Wrapped Chicken


  • 1 1/2 lbs thick chicken cutlets, cut into 2'" cubes
  • 1/2 lb pkg bacon, slightly cooked & drained
  • 1/4 cup soy sauce, low sodium
  • 1/2 cup dark brown sugar

Spread the bacon pieces out over several layers of paper towels on a microwave-safe plate. Cover with another layer of paper towel. Microwave on high until the bacon fat begins to melt but the bacon is still pliable, about 1 1/2 minutes. Cut slices in half. Wrap chicken cubes with bacon and secure with a toothpick. Place chicken in a shallow pan. Pour soy sauce over chicken and refrigerate for 4 hours. Sprinkle with brown sugar and broil in the oven for 5-7 minutes on each side until chicken is done and bacon is crisp.


** Switch it up. Try using shrimp instead of chicken.
