Roast Pork Tenderloin

Pork tenderloins are lean, tender, delicious and very inexpensive. I usually buy a double package at Sam's Club. They're great for pulled pork or just roasted in the oven. Roasted pork tenderloins are quick and easy to prepare, but it will taste like you roasted it for hours. Believe it or not, it only takes about 30 minutes from start to finish.

Roast Pork Tenderloin

  • 1 or 2 pork tenderloins, about 1 lb each
  • 4 tbs Honey Mustard
  • 4 tbs Apricot or Peach Preserves.
  • Salt & Pepper
  • Sprinkle of garlic powder
In a small bowl, mix together the honey mustard and the preserves. Season the meat with salt, pepper and garlic powder. Sear pork in a lightly greased skillet for a minute or two on each side to hold in the juices. Remove from skillet and place in a baking pan. Bake at 375 degrees for about 15 minutes. Remove from oven and brush with glaze on both sides. Return to oven and continue baking for an additional 10 minutes until the internal temperature reaches 160 degrees. Let it rest for 5 minutes before slicing into 1/4 " pieces.

**Use your imagination. You can use a marinade, dry rub or glaze the pork with your favorite ingredients to make it your own.
