Kelly's Italian Potato Pie.

Our beautiful daughter-in-law, Kelly, (my son Marty's wife) also has a specialty of her own, ......"Potato Pie". It's great with a roast beef, ham or turkey dinner. It's like a huge potato croquette and every bit delicious. My son, Marty, is one lucky guy. (I just think that it's great to have all of this talent in one family......makes my life so much easier.) This potato pie is to die for. It's packed with delicious. Give it a try.


Kelly's Italian Potato Pie


  • 5 lbs potatoes, boiled
  • 1 stick butter
  • Milk
  • 1/2 cup chopped fresh parsley
  • 1 cup grated Parmesan cheese
  • 1- 8oz mozzarella, grated
  • 1/2 lb Ham, cut in strips
  • 1/2 lb Genoa Salami, cut in strips
  • 4C Italian flavored bread crumbs
  • salt & pepper to taste

Mash boiled potatoes with butter, parsley, grated Parmesan cheese, grated mozzarella, salt & pepper, and as much milk as you need to get a thick mashed potato consistency. Grease a large baking pan, sprinkle with the flavored bread crumbs to cover the entire bottom of the pan. Pour in 1/2 of the mashed potatoes. Top with ham and salami, (add additional mozzarella, if desired). Pour the remaining mashed potatoes on top. Sprinkle a thin layer of flavored bread crumbs on top and dot with pats of butter.

Bake at 450 degrees for 25 to 30 minutes. Remove from oven and put under the broiler for about 2-3 minutes longer to brown the top. Let settle for about 15 minutes and serve.
