White Pizza Dip

My co-worker Matt should have his own cooking show. Not only is he a great cook, but very entertaining. We are constantly talking food and swapping recipe ideas. He was good enough to share this one that he came across recently .....a real winner.

White Pizza Dip

1 cup ricotta
1 cup sour cream
8 oz of mozzarella, shredded
1 pkg of Lipton's Herb & Garlic Soup mix
1 pkg of Hormel diced Pepperoni


Mix the ingredients together with the exception of the mozzarella. Put 1/2 mixture into a 1 qt casserole dish, top with 1/2 of the shredded mozzarella, repeat with the other 1/2 of the mixture topping it with the rest of the shredded mozzarella. Bake at 350 degrees for 30 minutes.

Serve with baguette French bread that has been sliced and toasted in the oven.

** Be creative and daring..... modify to your liking. You can leave out the pepperoni, add 1/2 cup cooked chopped spinach or broccoli. You can even make it low-cal by using low-fat sour cream and cheeses.
