Two Ingredient Pumpkin Muffins

It's my favorite time of the year again and I am just loving all the pumpkin recipes on FB. This one sounded too good to be true.  My co-worker Cathy saw the recipe, made them and brought one in for me to try.   Delish!  

I still didn't believe that it was possible with only two ingredients  and one bowl so I had to give it a try.  So easy and they came out perfect.  I drizzled a little glaze over them.  Next time, I'm going to  get a little crazy and add some chopped pecans and raisins. 

Add a cup of hot tea, coffee or cocoa to this little pumpkin treat on a cool fall afternoon. Perfect!

Two ingredient Pumpkin Muffins

Ingredients
  • 1 box Yellow or Spice Cake mix 
  • 1 can Pumpkin (15 or 16 oz - not pumpkin filling)
Directions

Preheat oven to 350 F
Pour cake mix into a bowl.
Add canned pumpkin to bowl
Stir the two ingredients together.
Keep stirring! It really starts looking like batter.
Spray a 12 medium muffin tin pan with Pam
Scoop batter into muffin tins.( I used an ice cream scoop)
Bake for 15-20 minutes. Test for doneness with a toothpick.
