Summer Zucchini Saute'

Okay, so today's count makes it 64 zucchini, so far. (thanks to my sweetie's farming skills).  It has really been a phenomenal summer for this versatile veggie.

 We have already prepared these beauties a number of different ways.......Zucchini Parmigiana , Quiche, Omelet, Pasta Sauce, Oven Baked Sticks and Breads.  The freezer is now full. We even enjoyed Zucchini Chocolate Chip Bread (substituting chocolate chips for the raisins).

Now, here's one more that I would like to share.....Summer Zucchini Saute'.  It's a quick, 3 ingredient, stove top creation. My mom used to prepare this as a summer side dish. Great along side a grilled steak with a fresh tomato, basil and mozzarella salad.  Add some farm fresh grilled corn on the cob for a colorful summertime fiesta.

Back in the day, Mom, Papa Sal and the rest of us would sit in the backyard at the picnic table under the grape vine and enjoy many of these light summer meals.

Summer Zucchini Saute'

1/2 stick of butter
2 medium zucchini, unpeeled, sliced thin.
1 small onion, sliced thin.

Heat skillet, add butter.  When butter is melted, add zucchini and onion and saute' until golden brown over medium heat.  As zucchini gets transparent and golden brown, flip with a spatula to ensure that it cooks evenly.  Salt and pepper to taste.

Enjoy and ....don't forget the wine!
