Pumpkin Pie Oatmeal

Pumpkin, pumpkin and more pumpkin. During the autumn months, it seems as though we can't get enough of the stuff.....and not just pumpkin pie and Jack-O-Lanterns.  It's pumpkin latte, pumpkin doughnuts,  pumpkin bread, pumpkin pancakes and even pumpkin ice cream.   The list goes on.

For the first three quarters of the year, nobody even thinks about this huge orange squash but come September, it's a pumpkin free for all.

Well today I found a recipe online that I'd like to share ....Pumpkin Pie Oatmeal.  It sounded like a  healthy,  low calorie and delicious way to start the day so I thought I'd give it a try.  Delish!!!

Pumpkin Pie Oatmeal

Ingredients:
  • 1/2 Cup Whole Grain Oatmeal
  • 1 Cup Water 
  • 1/4 Cup Milk
  • 1/2 Cup Pure Pumpkin Puree 
  • 1 Packet Sweetener 
  • Ground Cinnamon(to taste)
  • Pumpkin Pie Spice (to taste)
  • 1 Tbs Walnuts or Pecans (optional)
Microwave water and oatmeal for 2 minutes, stir in milk to give it a creamy texture.
Mix in pumpkin puree, sweetener and stir.
Top oatmeal with cinnamon, pumpkin pie spice and your favorite toppings.

Experiment a little....try using raisins, chopped dates, a little coconut or chocolate chips as an added topping.
