Christine's One Pan Fiesta


Who doesn't like a one pot meal that takes less than a half hour to prepare? A special thanks to my niece Christine for sharing this one. Chris is always running with her two little ones, Lily and Tommy. There's always something to do; somewhere to go. Meals like this are great for anyone whose day is hectic.
Not only is this one easy to make but delicious and inexpensive as well.


Christine's One Pan Fiesta

  • 1 small onion diced
  • 1 pepper diced
  • 1 lb. boneless chicken breast cubed
  • 1 –10oz box frozen corn
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 1/4 cup minute rice


Saute onion, pepper and chicken until cooked. Add corn, broth & salsa and cook until boiling. Add rice, cover and cook for 5 minutes(low flame). Fluff rice with fork and serve.

*I’ve also used shrimp in place of the chicken. Add the shrimp with the rice.
**Try adding some black beans, too.
