Zucchini Casserole

As you know Zucchini is one of my favorite vegetables. There are just so many ways to prepare it. My niece Anne Marie shared her friend Denise's recipe with me this week. This casserole is so easy to make and it's another delicious way to get the kids to eat their veggies. I just love the fact that my family continues to share their new recipe finds. Even though, we are blessed with so many wonderful handed down traditional recipes, there's always room for a few more.

Zucchini Casserole

  • 2 lbs Zucchini ( Sliced Thin )
  • 2 Med Onions ( Chopped )
  • 1 Cup Grated Carrots
  • 1 cup Sour Cream
  • 1 can Cream of Chicken Soup
  • 1 Stick ( 1/2 cup ) Melted Butter
  • 1 Package Stove Top Stuffing Mix (Chicken )

Preheat Oven 350*

Place Zucchini and onions in large pot with approx. 1 1/2 inches of water. Bring to boil and simmer for 10 min. Drain well.

Do not prepare stuffing as directed, Instead mix crumbs, seasoning packet and melted butter together. Set aside

Mix Zucchini, onions, carrots, sour cream, soup and 1/2 stuffing mixture in large bowl. Place in lightly greased 2 qt casserole dish. Sprinkle with other half of Stuffing Mix.
Bake in 350* oven 40-45 min.
