
Zucchini Casserole
- 2 lbs Zucchini ( Sliced Thin )
- 2 Med Onions ( Chopped )
- 1 Cup Grated Carrots
- 1 cup Sour Cream
- 1 can Cream of Chicken Soup
- 1 Stick ( 1/2 cup ) Melted Butter
- 1 Package Stove Top Stuffing Mix (Chicken )
Preheat Oven 350*
Place Zucchini and onions in large pot with approx. 1 1/2 inches of water. Bring to boil and simmer for 10 min. Drain well.
Do not prepare stuffing as directed, Instead mix crumbs, seasoning packet and melted butter together. Set aside
Mix Zucchini, onions, carrots, sour cream, soup and 1/2 stuffing mixture in large bowl. Place in lightly greased 2 qt casserole dish. Sprinkle with other half of Stuffing Mix.
Bake in 350* oven 40-45 min.
