Joanie's Zippidy Do Da Zucchini

This year, my husband Marty is having another Zucchini Abundanza. There are so many zucchini coming up in the yard that I am running out of ways to prepare it.

My German-Italian sister-in-law Joanie came up with yet another way to make zucchini.....Zippidy Do Da Zucchini! We had given her a couple of zucchini from the garden this past weekend. While talking to her on the phone tonight, she mentioned that she sauteed the zucchini with onion and added a few tablespoons of mild salsa to the mix. Joanie said it made a really delicious side for the chicken cutlets she made the other night. Going to have to give this one a try. Sounds delicious.

Joanie's Zippidy Do Da Zucchini

  • 1 med zucchini, sliced in coins and then sliced in half
  • 1 med onion, chopped
  • 2 tbs olive oil
  • 2-3 tbs salsa, mild or medium

In a fry pan, saute zucchini and onions in olive oil. When zucchini is tender and onion is transparent, add salsa and cook for an additional 5 minutes. Serve as a side dish.
