Sun-Dried Tomatoes

Whether or not you grow tomatoes, this is a great way to enjoy tomatoes all year long. I freeze them in baggies and use them as I need them in salads, sauces, dips and breads. They have a sweet concentrated tomato taste and come in handy during the winter when the prices of tomatoes are through the roof. I especially like to add them to Alfredo or Pesto sauce.


Sun-Dried Tomato Recipe


Use ripe plum tomatoes
Cut tomatoes in 1/2 lengthwise
Scoop out seeds with a teaspoon
Slice halves into 1/2" strips

Place on a cookie sheet which was greased with olive oil. Sprinkle with desired herbs and spices i.e. fresh basil, oregano, garlic. Salt & pepper to taste. Drizzle olive oil over the tomatoes.

Bake in 250 degree oven for approximately 4 hours

(After cooling, the tomatoes can be put in baggies and frozen for use in recipes at a later date)
